Three-ingredient cheesecake

Nowadays I’m very mindful about the amount of sugar I take in, when I get that feeling or a craving I don’t immediately act on it, if after two, three days I still have an itch, I’ll get some Gordans Wine Gums, Sour Worms, a Kit Kat or a slice of cake from the Goodie Bag Factory.
If I decide to make something, my go to dessert of choice is cake in a mug (bakes in under five minutes in the microwave), or non-bake cheesecake which sets in the fridge. Growing up, I was not exposed to cheese cake, I remember hearing about it in high school and thinking what an odd combination, I wanted nothing to do with it. Years later in varsity there was a corner coffee shop with a huge variety of cheesecake that a friend was obsessed with. It was then I learnt that all this time we weren’t referring to a piece of cake with a slab of cheese.
Pretty funny if you ask me, but we live to learn and I’m ok with laughing at myself! There are days when not all my ingredients for a no-bake cheesecake are within my budget and this is when I take advantage of ingredients I would usually already have in my kitchen and make the three-ingredient variation. It only takes minutes to make and it’s insanely delicious. Biscuits, Nutriday Plain yoghurt and Nestlé condensed milk is all that’s required. It seriously tastes exactly like conventional cheesecake.
The ‘cheesiness’ is there! Even without any actual cheese being used. Many people think that making a cheesecake is a complex task. Sometimes it really is, but, (life hack alert), you can make a cheesecake in the microwave in less than five minutes. Dessert bars are so classy when entertaining, they look chic, cute and allow the comfort of indulging in more than one type of dessert. Curiously, I took out the cupcake tin to make bite size cheesecakes, do I line the pan or not? Probably. If it’s not a silicone mould. The more time you spend in the kitchen the more your confidence grows to discern certain things. These impressive mini cheesecakes are the perfect addition to your dessert bar and a guilty pleasure the whole family will enjoy. Vary your biscuit base, use other yoghurt flavours, garnish the delicacy and enjoy! INGREDIENTS:
3/4 pack lemon creams 25g Nutriday plain yoghurt 1/4 can Nestlé condensed milk, well shaken before opening Splash of lemon
INSTRUCTIONS
Pop the lemon creams into a Zip Lock bag, crush using a rolling pin. Add the crushed lemon creams to a bowl. Microwave for 30-45 seconds. Mix the crumbs together well then add to cupcake tin, press the crumbs down onto the base firmly to create your crust using the back of a teaspoon. Mix the Nutriday yoghurt and Nestlé condensed milk together in a bowl. Microwave the filling for 2-3 minutes. Remove the bowl, mix rapidly and put back in the microwave for another 2-3 minutes, remove, add a splash of lemon and mix Pour the mixture over the biscuit base and refrigerate for a minimum of four hours or overnight for best results Serving suggestion: Serve with fresh berries and mint leaves to garnish
