I always think of the essential workers in my immediate community because we see them hard at work when we are up and about. There was a short holiday about a month ago and that is when I made a mental note to self that over the next holiday I need to be intentional about taking a meal out for the petrol attendants at my favourite filling station down our road. They consistently give the best service with the biggest smiles. It is such a joy interacting with service providers who always give you their best. Independence holidays rolled around and this provided the perfect opportunity to not only celebrate Botswana, but also the beautiful people of Botswana who make living here such a joy. I wasn’t sure how many attendants there were on duty so it was important to put together a meal that could be shared by a number of individuals and have them all happy with their portion size.
Pull apart bread or a giant Savoury Cinnamon roll style bread seemed like great options. Ultimately I went with the large savoury roll and had it in the oven until the roll was baked golden brown with a soft and delicious centre topped with Bull Brand Mince. It was not only fun creating, it was a total crowd pleaser! At first glance, one might expect a pan filled with cinnamon, sugar and gooey icing, but this bun is different, it is a game changer. A superb variation of a classic that is just delightful. I hand delivered the warm roll to the station and communicated that I had brought them all Independence lunch. They looked at the beautiful roll (even if I say so myself) while a few asked repeatedly in a little disbelief, if I had made it myself. I felt a bit chuffed at the question, clearly it looked like it came out the pages of a glossy food magazine. We did a head count and I cut it up and served them with a side of Atchar. It felt amazing showing these selfless individuals that they are seen and appreciated. I’m already starting to think how best to make December special for them. This afternoon while I was watching telly, I realised after some time the kids left the cartoons on. You know how sometimes you always end up watching for a little bit? Well I saw Santa make a cameo and it dawned on me that ‘tis the season is fast approaching. We are three months away from December and that means Christmas! This dish is perfect for this time of year, especially since so many people tend to have family and friends visiting over for the holidays. What better way to impress your guests with this easy mouth-watering 2 ingredients Nutriday dough Savoury roll coupled with delicious Bull Brand mince.
INGREDIENTS 2i Nutriday dough 2 cups flour 1 ½ cups yoghurt 4 tsp baking powder
FILLING Chilli Bull Brand Mince meals Cheese (Optional)
INSTRUCTIONS Mix Nutriday dough ingredients to form a light fluffy ball of dough. Roll out into a rectangle the dough then cut into equal strips. Ensure they are slightly thick as they need to stand on their own. Roll up one strip into a coil and place it in the centre of prepared baking dish (this is the centre of the giant roll). Continue coiling the remaining strips around the centre roll, until you’ve used up all the strips. Leaving gaps between the coils, which is where your filling will go. Once complete, fill the spaces between the coils with Bull Brand mince. It takes a little patience to fill the roll neatly and to ensure its filled well. Top with cheese if you wish to elevate your dish even more. We had a very little cheese, so I chose to fill the last coil with cream cheese and grated cheese. Bake the roll at 180°C in the centre of the oven for 35 minutes, until golden brown.
