Engaging in a self-care routine has been clinically proven to reduce or eliminate anxiety and depression, reduce stress, improve concentration, minimise frustration and anger, increase happiness, improve energy to mention but a few.

At least once every quarter in the year since maybe 2021, a group of us girls spend a weekend away in the name of R & R. Which can be Rest and Relaxation, Rejuvenation, or Recuperation. These sessions are made up of activity, lots of chatting, laughs, food and drink. Chellzkitchen loves to curate the meals for these getaways. Surround yourself with positive people who bring out the best in you. They say a “Candle loses nothing by lighting another”. Think about that for a bit, let it marinate. Its powerful, these ladies light my candle.

If you do not engage Chellzkitchen to facilitate your excursion, make sure your drinks accommodate everyone and allow guests to BOB. It’s very important to know if anyone in the group has allergies or foods they do not eat, preference etc. Making meals and eating together brings people together. Keep meals simple so as to no not spend too much time at the pots and share kitchen duties. One can chop while another cleans and another cooks. Everyone has a strong suite or what they enjoy in the kitchen. It’s also another great communal space to bond in. My key dishes were Striped Horse Beer Bread for the charcuterie board as a late afternoon arrival starter/snack. For dinner, Chicken korma with crispy rice and an experimental Puffed Rice Paper. Two ingredient Nutriday cinnamon rolls as well as an easy sausage baked bean casserole were the next morning’s spread. I recently saw a picture of this casserole online and was intrigued. The sausage and beans are the main ingredients, I believe that all the other vegetables can be what you feel like or is available at hand.

I’ll share the hearty (and incredibly comforting) sausage and baked bean casserole recipe for your brunch or even a quick no stress week day lunch or dinner.

Use any pork or chicken sausage and grab some baked beans from the cupboard to bring this dish together. I used bell peppers specifically because of the lovely colours. However, use what you are in the mood for.

Best part about this recipe is that it's ready in under 30 mins and it uses one pot so there is minimal cleaning up too. It’s a win-win for all. Give it a try and share images to our Facebook page.

INGREDIENTS

1 tbsp vegetable oil

600g pork or chicken sausages

1 onion, chopped

2 garlic cloves, crushed

Robot peppers diced

1 tin baked beans

Small handful of fresh parsley leaves, chopped

Spring onion

INSTRUCTIONS

Heat the oil over a high heat in a large pot and add the sausages. Brown all over, then lift out on to a plate.

Add the onion and peppers to the empty casserole and fry for five minutes or until onions are golden and all veggies just begin to soften. Stir in the garlic, cook for 30 secs.

Return the sausages to the pan, stirring occasionally.

Stir in the beans and cook for a few more mins to heat through. Season to taste. Stir through the parsley and serve with crusty bread.

Top with spring onion for a pop of colour and freshness.
