If we are being completely honest with ourselves, food is a huge focal part of most if not all occasions. Think about it. The menu at a wedding is very important, when you cook a Sunday best for your family you want to make it very special, kiddie’s birthday parties and promotion dinners.



Every occasion tailors a menu to add to the experience of the guest. Food is not only important for general wellbeing, eating a healthy diet and discovering the right foods to eat for your own body increases longevity. We hosted a bubbly breakfast recently with a mandate to celebrate our annual Women’s Etiquette Brunch, which is billed for June 11, 2022.

This will be the fourth installment of this astounding event after a two-year break due to COVID-19. #WEB22 promises to be everything and more with a panel that will bring about thought provoking conversations, which aim to give women the tools they need to balance, grow and build themselves. The guests who sat at the bubbly breakfast long table were invited to discuss the topics, which will be spoken on at the main event. We had Miss Botswana Palesa Molefhe, Imaan Kaadar (Options), Tshepi Scheffers, Portia Kalane, Lebo Nkwe (Bayport) amongst a few.

After a toast to celebrate what matters with Graham Beck Brut Rose, we started the conversation, which flowed seamlessly and even lost track of time for a bit. I put on my Chellzkitchen apron as I stepped into the kitchen to check on Jerome our concierge for the day and put nibbles in the oven to get warm. Rodizio supplied us with Chicken and Ribblet platters, which Chellzkitchen added to with bruschetta, scones, cheese puffs, pigs in a blanket and a fruit board. Betsi of the Goodie Bag Factory supplied us with a delicious, spongy chocolate cake. I for one cannot wait to see what she comes up with for brunch. We finally made our way to the food table and thoroughly feasted. Everything was easily put together and tasty. Bruschetta is an antipasto from Italy consisting of grilled bread rubbed with garlic and topped with olive oil and salt. Variations may include toppings of tomato, vegetables, beans, cured meat, or cheese. In Italy, bruschetta is often prepared using a grill.

Avocado cheese bruschetta is a creamy and spicy appetiser your guests will love. Always a hit at a party. I always find myself looking for the perfect tasty appetiser to serve my friends and family and this is one of my favourites, it is very versatile and perfect for every occasion.

INGREDIENTS

1 large avocado, peeled and pitted juice from

1/2 lime/lemon

Salt and pepper

Cherry tomatoes

Feta cheese

1 French loaf, cut into thick slices diagonally Willow creek olive oil

Balsamic reduction

INSTRUCTIONS

• Preheat oven to broiler on high. Add the slices of French bread to a rimmed baking sheet and toast under the broiler (keep an eye on it!), approximately 30 seconds per side depending on the strength of your broiler. Alternatively toast it on medium to high heat on a frying pan.

• Remove from oven and add the sliced toasted bread to a large platter. Set aside.

• In a medium bowl, mash up the avocado with the back of a fork until smooth but still a little chunky. Stir in lime juice. Season with salt and pepper to taste.

• To assemble the bruschetta, add approximately 1 to 2 tablespoons of the avocado mixture to a piece of toasted bread.

• Top with cherry tomatoes and crumbled feta cheese.

• Drizzle with olive oil and/or Balsamic reduction.
