Have you heard of Spykos? It is a word for soul food that is quick and easy to eat, tastes good but is generally high in calories.
The kids quite enjoy the occasional Mafesh and Magwinya so I made them a batch at home. My homemade ones are different in a few ways from those of bo-Mmaseapei, but are equally good.
There is no recipe for motherhood; you need to feel it, live it and enjoy it! With school being out, this statement seems to take on a different meaning. You have to prepare yourself mentally, financially and otherwise to survive this short period. I recently put up a poll online asking who was more excited about schools closing (holidays).
I wanted to know if it was the kids or the parents. Unanimously the parents felt they were the more excited parties. Personally for me it's a 50/50 due to countless reasons.
One comment that stood out and gained a few chuckles was that it is all fun and games until you start to notice that the fridge seems to get depleted faster than usual and needs replenishing more frequently. I believe this is true for everyone come school holidays, as kids find so many opportunities to feel peckish and feel like eating something.
For peace and sanity, it’s best to meal plan and ensure that there is always something light available. I make sure to always have Nutriday yoghurt’s and fresh fruit for snacks at the ready. Otherwise we stick to a hearty and filling breakfast, lunch and supper. Budget buy for your weekly meals, shop smart and make meals that are not time consuming. Nutriday two-ingredient are fool proof, soft, cakey but delicious magwinya. I will always advocate for two-ingredient dough because it’s easy and quick. The boys were treated to some chips, fat cakes and russians. They enjoyed these for supper but they make for a superb lunch. What are some of your holiday go to meals for the kids? INGREDIENTS
3 Large potatoes
2 Cups cake flour
1 ½ Cups Nutriday plain yoghurt
2 Tsp baking powder
Oil Russians
INSTRUCTIONS
Peel potatoes and cut them into chips (peeling them is optional, skins are healthy) Place the chips in cold water while heating oil. Remove chips from water and dry with kitchen towel. Fry chips on medium heat until golden brown. Remove and place in a bowl. Cover the bowl to reach a slaap chip consistency of chips. Mix flour, baking powder and Nutriday plain yoghurt and incorporate to create a dough. Divide your dough to sizes of your preference. Heat your oil until its hot then reduce to a medium to high heat and cook your dough balls until golden brown. Score your russians and cook on a frying pan with 2 tbls of oil. Serve immediately while hot with sauces of your choice. Also feel free to include additional atcha or salad for older kids or parents.
