One of my good friends, Kitso, got me a waffle maker, it was on my birthday wish list. I made her hold onto it until such a time I was ready to unbox it in an exciting way.
That’s how Waffles & Bubbles came about. An excuse to use the waffle maker as well as get some friends together for some R&R, a great overnight excursion where us gals let our hair down and have open, honest, and difficult conversations with each other.
This Homemade Waffle Recipe uses just a handful of ingredients that you likely have on hand already! The recipe guarantees that the waffles would be crisp on the outside, fluffy on the inside, the perfect start to any weekend morning! The batter in this waffle recipe is not the same as pancake batter as I had thought. I did ask the girls before the weekend if they knew how to make waffles.
One tip I received was that the egg whites had to be beat and folded in. I immediately got a little anxious, wondering if that complicates an otherwise straightforward batter.
So, the batter uses more egg (plus we beat the whites separately and fold them in) for the most fluffy waffles ever! The extra egg in a waffle batter is what makes a crispy exterior surrounding a moist fluffy inside with lots of air pockets. While you certainly can cook pancake batter in your waffle iron, they won’t have the same texture or flavour that classic waffles have.
Pancake mix or a pancake recipe will be a bit denser and won’t have the same texture on the outside. I was lazy when I got home and had to whip the boys up some waffles, the first time I did pancake batter.
The next time I did them right, took my time and made them with lots of love. If you want extra fluffy waffles with a crisp exterior, there’s a simple trick. It will only add about 2-3 minutes to the prep time, so it’s totally worth the effort. It is separating the egg whites and beating them until stiff peaks. Fold them into the batter. This step only takes a few minutes and makes a big difference.
If you are short on time, you can skip this step but I highly recommend it!
TIPS You can skip the step of separating the egg and beating the whites but it really makes these waffles amazing. Do not over mix the batter, it should be a little bit lumpy.
Preheat your waffle maker and lightly oil with vegetable oil.
Cooking spray isn’t recommended as it can cause a sticky residue. Put enough batter so the waffle is almost full, it will run out to the edges a little bit. Waffles & Bubbles took centre stage at breakfast. We served the waffles in various ways.
There was a Southern Style Fried Chicken, Bacon with Sour Cream Cheese Sauce. A more traditional Whipped Cream and Strawberries and one with Sausage and Cheese. All accompanied by Graham Beck Bubbles.
Exactly what the weekend called for. I’m looking forward to the next session with the girls. We had Pizza, PJs & Bubbles. Followed by Waffles & Bubbles. How creative you get with the theme for our next session.

INGREDIENTS
2 cups flour
1 tablespoon baking powder
½ teaspoon salt
2 tablespoons sugar
2 eggs divided
1 ⅔ cup milk
⅓ cup melted butter or oil
INSTRUCTIONS
Preheat the waffle iron according to the manufacturer's directions. Place flour, baking powder, sugar, and salt in a bowl. Whisk to combine. In a small bowl, mix egg yolks, milk, and butter. Set aside.
In a separate bowl, beat egg whites with a mixer on medium high speed until stiff peaks form. Add egg yolk mixture to flour mixture and stir to combine. Fold in egg whites. Drop by large spoonfuls onto greased waffle iron, close the lid and cook about 3-5 minutes.
